保健食品
保健食品是指“表明”具有特定保健功能的食品。即适宜于特定人群食用,可能具有调节机体功能,不以治疗疾病为目的的食品。
保健食品标签和说明书必须符合国家有关标准和要求,并标明下列内容:
(一)保健作用和适宜人群;
(二)食用方法和适宜的食用量;
(三)贮藏方法;
(四)功效成分的名称及含量。因在现有技术条件下,不能明确功效成分的,则须标明与保健功能有关的原料名称;
(五)保健食品批准文号;
(六)保健食品标志;
(七)有关标准或要求所规定的其它标签内容。
保健食品的名称应当准确、科学,不得使用人名、地名、代号及夸大容易误解的名称,不得使用产品中非主要功效成分的名称。
保健食品的标签、说明书和广告内容必须真实,符合其产品质量要求,不得有暗示可使疾病痊愈的宣传。
申请《保健食品批准证书》必须提交下列资料:
(一)保健食品申请表;
(二)保健食品的配方、生产工艺及质量标准;
(三)毒理学安全性评价报告;
(四)保健功能评价报告;
(五)保健食品的功效成分名单,以及功效成分的定性和/或定量检验方法、稳定性试验报告。因在现有技术条件下,不能明确功效成分的,则须提交食品中与保健功能相关的主要原料名单;
(六)产品的样品及其卫生学检验报告;
(七)标签及说明书(送审样);
(八)国内外有关资料;
(九)根据有关规定或产品特性应提交的其它材料。
申请生产保健食品时,必须提交下列资料:
(一)有直接管辖权的卫生行政部门发放的有效食品生产经营卫生许可证;
(二)《保健食品批准证书》正本或副本;
(三)生产企业制订的保健食品企业标准、生产企业卫生规范及制订说明;
(四)技术转让或合作生产的,应提交与《保健食品批准证书》的持有者签定的技术转让或合作生产的有效合同书;
(五)生产条件、生产技术人员、质量保证体系的情况介绍;
(六)三批产品的质量与卫生检验报告。
保健食品的批文取得,不需要大规模的疗效、不良反应验证结果。与药品不同,主要是无副作用。

什么是水的含盐量
什么是水的含盐量
    水的含盐量(也称矿化度)是表示水中所含盐类的数量。由于水中各种盐类一般均以离子的形式存在,所以含盐量也可以表示为水中各种阳离子的量和阴离子的量的和。
  水的含盐量与溶解固体的含义有所不同,因为溶解固体不仅包括水中的溶解盐类,还包括有机物质。同时,水的含盐量与总固体的含义也有所不同,因为总因休不仅包括溶解固体,还包括不溶解于水的悬浮固体。所以,溶解固体和总固体在数量上都要比含盐量高。但是在不很严格的情况下,当水比较清净时,水中的有机物质含量比较少,有时候也用溶解固体的含量来近似地表示水中的含盐量。当水特别清净的时候,悬浮固体的含量也比较少(如地下水),因此有时也可以用总固体的含量来似表示水中的含盐量。

啤酒的度数
很多朋友将12度的啤酒误认为含有 12%的酒精浓度,其实啤酒的度数和白酒度数的含义是两码事,白酒的度数是其酒精含量。而啤酒的度数实际上指的是麦汁浓度,即12度的啤酒是用含糖量为12度的麦芽汁酿造成的啤酒。成品啤酒的含糖量大约在1.5-2.5%之间。而啤酒的酒精含量多数在3.5% 至4% 之间。德国啤酒中酒精浓度则较高,大约在5-9%之间。而且苦味比较重。
啤酒B瓶
所谓B瓶,就是在啤酒瓶底以上20毫米范围内打有专用标记B,并有生产企业标记、生产的年和季度等标识。比如瓶脚打有"BACIGD2885198田"标记,分别表示:B瓶、××玻璃厂、广东、B瓶模具号、99年第二季度。  
    据介绍,B瓶的安全性高于非B瓶,关键是"耐内压力"标准在1.2以上。而非B瓶对此没严格限定,如被碰撞或受热不均等,可能爆炸。  
    但专家提醒,即使用B瓶,也不要曝晒火烤、碰撞敲打。  
    "B瓶话题"早在1996年就出现。当时国家技监局制订了啤酒瓶的新标准,规定要有"B"字标记等。这有助改变啤酒瓶与其它瓶子混用的状况,也为今后限定啤酒瓶使用期打下基础。  
    新标准从1997年起实施。有关方面要求全国的啤酒瓶生产企业尽快淘汰非B瓶。但不少企业我行我素。  
    今年3月,国家技监局发布通知,要求啤酒生产企业从4月起,所用的啤酒瓶都须符合新标准。啤酒销售者从6月起,不再销售与新标准不符的瓶装啤酒。凡有违反,即为产品存在危及人身、财产安全的隐患,要受到查处。

健康食品
直至现时为止,香港或其它西方国家如美国和澳洲在法律上并没有对健康食品下定义,而台湾就把健康食品定义为「提供特殊营养素或具有特定之保健功效,特别加以标示或广告,而非以治疗矫正人类疾病为目的之食品」。现时在市场上所谓的健康食品包括食物补充品、功能食品和天然食品等,虽然卫生署及食物环境卫生署监管健康食品上的卷标、营养声称和营养素功能声称,但是消费者委员会曾发现市场上部分产品有夸张失实的声称,更有部分不乎合世界卫生组织的水平。消费者必须查看清楚产品的来源、性质及功能,亦不要尽信售货员的推销,应咨询有关专业人士的意见。

花青素

花青素
自然界有超过300种不同的花青素。他们来源于不同种水果和蔬菜如葡萄、接骨木红、黑加仑、紫胡罗卜和红甘蓝、颜色从红到蓝。在此天然色系中,科汉森提供几种不同色素的产品。
花青素颜色随PH值发生变化,从当PH值为3时的覆盆子红到当PH值为5时的深蓝莓红。在大多数应用中这些色素具有良好的光、热和PH稳定性,并且能够承受巴氏和UHT热处理。花青素广泛地应用在饮料、糖果、果冻和果酱中。
近年来对作为多酚的花青素对健康可能带来的好处的关注越来越集中。将来花青素的这种特性在功能食品和保健食品中有可能得到日益应用。

葡萄糖内脂
葡萄糖内脂(简称GDL)是由葡萄糖氧化成葡萄糖酸或其盐类,经纯化脱盐、脱色、浓缩、结晶而制得,是一种多功能食品添加剂。随着食品工业的发展,GDL在食品工业中应用日益增广,概括起来主要有以下几个方面:
一、用作豆腐凝固剂。采用GDL作为蛋白质凝固剂生产豆腐,豆腐质地洁白细嫩,无用卤水或石膏所具有的苦涩味,无蛋白质流失,出豆腐率高,且使用方便。鉴于GDL单独使用时,豆腐有微酸味,因此常把GDL和CaSO4或其他凝固剂按1∶3~2∶3配比混合使用,其用量为干豆重的2.5%,温度控制4℃左右时效果很好。
二、作为奶类胶凝剂。主要用于生产酸奶或奶酪,在工业使用中,用GDL酸化形成牛乳的凝胶强度是发酵型的2倍左右,其用量在添加0.025%~1.5%在牛乳中后使可使制品达到所需凝乳pH,而在添加3%时在30℃下保温所制得的牛乳凝胶与乳酸发酵所制作的凝胶具有相似的结构。
三、作为品质改良剂。将GDL用于午餐肉和碎猪肉罐头,可增加发色剂的效果,从而降低毒性较大的亚硝酸盐的用量,同时GDL还具有乳化作用,防腐作用等,从而提高肉糜罐头的品质,其最大用量为0.3%。
四、作为酸化剂。GDL可以添加于香草精、巧克力、香蕉等甜味果子露和果冻中,是复合膨松剂中的主要酸性物质,能缓慢产生碳酸气,可以生产别具风味的糕点。
此外,GDL还可作为螯合剂用在乳制品工业,啤酒工业中防止生成乳石、酒石;作为蛋白南絮凝剂用于含蛋白质的工业废水处理中;作为膨松剂也被广泛的应用。
